You don't need to have O2 go negative to determine the denitrification rate.
The denitrification rate would simply be the remineralization rate in anoxic
regions.

Having O2 go negative would make comparisons with observed O2 very difficult.
Yes, we would get some information about the regional structure of the nitrate
deficiency.  I suggest that if you are interested in this, you should add a
nitrate tracer to your model.
